INGREDIENTS (4 people):
For the preferment:

- 125 g of force flour
- 3 g of dry yeast
- 1 dl of water.
For the rest of the dough:- 230 g of force flour
- 30 g of cocoa
- 6 g of dry yeast
- 100 g of butter
- 1 egg
- 1 egg yolk
- 75 g of sugar
- 0.5 dl of milk
- Salt
- 150 g of chocolate drops

Make the preference the previous night. Mix in a bowl yeast, flour and water. Cover with film and leave at room temperature.

Mix in a bowl the rest of the dough ingredients, except chocolate, and knead. Add the preferment. Knead about 20 minutes, until a smooth and elastic dough is achieved. Add the chocolate and mix. Cover and let stand 60 minutes. When the dough has doubled its volume, knead again to degas and divide into two parts.

Fill 2 molds of 15 cm panettone and allow them to double their volume again for another 60 minutes. Preheat the oven to 175º C half an hour before baking. Paint with beaten egg and put in the oven about 40 minutes.
