INGREDIENTS (4 people):- 1/2 chicken breast
- 2 carrots
- 1 celery
- 1 onion
- 150 g mushrooms
- 2 garlic
- 200 g spinach
- 140 g of rice
- 6 dl chicken broth
- 2 dl of coconut milk
- Olive oil
- Salt
- Pepper
PREPARATION:

Peel and cut the onion, carrots and celery. Put a casserole on the fire with 3 tablespoons of olive oil. Add the onion, carrots and celery cut. Keep on medium heat 4 minutes.

Clean and cut Mushrooms in slices. Peel the garlic, remove the germ with a knife and chop the garlic. Add to the casserole of vegetables, mushrooms and garlic and leave over medium heat 4 minutes.

Cut the breast of diced chicken. Add 6 dl of broth, rice and breast to the casserole; salt and pepper Cook 20 minutes. Add the coconut milk and spinach, leave on the fire 3 more minutes and serve.
