INGRREDIENTS:- 1 avocado
- lemon juice
- 1 turkey tenderloin
- olive oil
For the sauce:
- 2 scallions
- fresh ginger
- 1 handle
- 30 ml of sugar
- 70 ml of cream
- Salt
- Water
PREPARATION:
Open and cut an avocado. With the help of a peeler, cut it into very thin slices. Sprinkle a lemon so it does not rust. Open a turkey tenderloin in butterfly and season with salt and pepper. Fill it with rolled avocado, leaving a centimeter on each side. Roll the meat, tightening firmly and tie it with kitchen thread.
In a frying pan, put a splash of oil and brown the tenderloin on both sides carefully when turning it. Put in a baking dish and cook for 30-35 minutes at 200º C.
Prepare the mango and curry sauce. Chop two chives and a piece of fresh ginger and poach with oil. Add a ripe diced mango and 1 knife of curry powder. Stir and add 30 ml of sugar. Add water to cover the fruit and reduce until you get the compote. Crush, add 70 ml of cream and cook 5 more minutes. Salt and pour hot on the sirloin. Cut the meat into slices.
